If you ever go to Baalbek, you can’t leave without eating sfeeha. It is considered one of the top rated dishes in Baalbek (might as well be top in Lebanon)


  • Dough
  • 500 grams (2 cups) All-Purpose Flour

  • 2.5 grams (1 teaspoon) Instant Yeast

  • 10 grams (1/2 tablespoon) Salt

  • 25 grams (1 tablespoon) Sugar

  • 350 grams (1.5 cups) Water

  • Filling
  • 250 grams Ground Beef

  • 250 grams Ground Lamb

  • 2 Medium size Tomatoes

  • 2 Onions

  • 1 teaspoon black pepper

  • 1 teaspoon ground nutmeg

  • 1 teaspoon chili powder

  • 1.5 teaspoon salt


  • Mix all the dough ingredients and knead for 5 minutes
  • Let the dough rest for 30 minutes
  • Roll the dough into thin layer and cut round portions
  • Prepare the filling by chopping the tomatoes and onions in the food processor very fine
  • Mix the meat with the tomatoes and onions and the spices
  • Place small portions of the filling on the dough you already cut
  • Close the dough from the four corners to produce a square shape
  • Bake in a preheated oven until brown
