450 grams flour 00
225 ml water
15 grams instant yeast
- Dough
Full amount of Biga prepared earlier
67 ml water
15 grams of salt
5 grams of honey
Directions
- Prepare the biga by lightly mixing all the ingredient (flour, water, and yeast) and put in sealed container 24 hours in the fridge
- mix the biga with the remaining water and honey
- Knead the dough for 10 minutes
- Let the dough rest for 2-3 hours covered
- Cut the dough into 260 grams portions and form the balls
- Let the dough balls rest covered for 2-3 hours until doubled in size
- Stretch the dough balls, add tomato sauce, cheese, olive oil
- Bake in 400 degrees oven for 2 minutes
