Lebanese Manakeesh

Ingredients
200g (1.5 cups) Flour zero (High in Protein)
300g (2.5 cups) all-purpose flour
10 grams (1 tablespoon) instant yeast
35 grams (1.5 tablespoon) of sugar
5 grams (1 teaspoon) salt
250 grams (1.25 cups) of water
Directions
- Mix flour, sugar, and yeast
- Add water and knead
- After 5 minutes add salt and continue kneading
- after 2 minutes add oil and continue kneading for 2 more minutes
- Cover dough and rest for 30 minutes
- Cut dough balls 120-150 grams each
- Cover dough balls and rest for 15 minutes
- Roll the dough balls
- Spread zaatar or cheese on the dough
- Bake in oven heated to 400 degrees Celsius until brown
