The Lebanese manoushe is one of the most popular dishes eaten at breakfast time. In this episode, we will learn about the correct way to prepare the lebanese manakeesh.


  • 200g (1.5 cups) Flour zero (High in Protein)

  • 300g (2.5 cups) all-purpose flour

  • 10 grams (1 tablespoon) instant yeast

  • 35 grams (1.5 tablespoon) of sugar

  • 5 grams (1 teaspoon) salt

  • 250 grams (1.25 cups) of water


  • Mix flour, sugar, and yeast
  • Add water and knead
  • After 5 minutes add salt and continue kneading
  • after 2 minutes add oil and continue kneading for 2 more minutes
  • Cover dough and rest for 30 minutes
  • Cut dough balls 120-150 grams each
  • Cover dough balls and rest for 15 minutes
  • Roll the dough balls
  • Spread zaatar or cheese on the dough
  • Bake in oven heated to 400 degrees Celsius until brown
